Braai Chicken Thighs with Mustard Marinade

A South African braai staple elevated with an overnight wholegrain mustard and garlic marinade.

Ingredients

  • 8 Chicken thighs, skin on
  • 3 Tbsp Dijon Mustard
  • 3 Cloves garlic, minced
  • Juice of 1 lemon
  • 2 Tbsp Olive oil
  • Fresh thyme and rosemary

Instructions

  1. Whisk mustard, garlic, lemon juice, oil, and herbs.
  2. Coat chicken thighs and marinate for at least 4 hours (overnight is best).
  3. Prepare your braai to medium heat.
  4. Grill chicken skin-side down first until crispy, then flip.
  5. Cook until juices run clear.

Ingredients

8 chicken thighs, skin-on

4 garlic cloves, crushed

Juice of 1 lemon

3 tbsp olive oil, 1 tsp smoked paprika

1 tsp honey, salt, black pepper

Fresh rosemary

Instructions

Combine mustard, garlic, lemon juice, olive oil, paprika and honey in a bowl.

Score the chicken thighs twice through the skin and coat thoroughly in the marinade.

Refrigerate overnight (minimum 2 hours).

Braai over medium-hot coals, skin-side down first, 12–15 min per side until charred and cooked through.

Rest 5 minutes before serving with pap or coals-roasted mielies.
